Dine on a Dime: Summer Corn & Black Bean Chicken Skillet

Ingredients
- 1 lb boneless, skinless chicken thighs or breasts, diced
- 1 tablespoon olive oil
- 2 cups corn kernels (fresh, frozen, or canned)
- 1 can (15 oz) black beans, drained and rinsed
- 1 bell pepper, diced
- 1 small onion, diced
- 1 teaspoon chili powder
- ½ teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lime
- Optional: chopped cilantro and avocado for garnish
Directions
- Heat oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and fully cooked, about 6–8 minutes.
- Add onion and bell pepper; cook for 3–4 minutes until softened.
- Stir in corn, black beans, chili powder, cumin, salt, and pepper.
- Cook for an additional 3–5 minutes, stirring occasionally.
- Remove from heat and stir in lime juice.
- Garnish with cilantro or avocado if desired and serve.
