Dine on a Dime:Thanksgiving Stuffed Sweet Potatoes
Serves: 4 | Cost: ~$2 per serving
Ingredients:
- 4 medium sweet potatoes
- 1 can (15 oz) canned turkey or 2 cups leftover roasted turkey, chopped
- 1 cup frozen mixed vegetables (like peas, corn, carrots)
- ¼ cup cranberry sauce (store-bought or leftover)
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- 1 tbsp olive oil or butter
Instructions:
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 40-45 minutes until tender.
- While sweet potatoes bake, heat olive oil in a skillet over medium heat. Add turkey and mixed vegetables. Season with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes until heated through.
- Slice sweet potatoes open and fluff the insides with a fork.
- Spoon turkey and vegetable mixture into each sweet potato. Top with a spoonful of cranberry sauce. Serve warm!
Tips to Save:
- Use leftover Thanksgiving turkey or roast your own for cheaper.
- Frozen veggies are cheaper than fresh and last longer.
- Cranberry sauce can be made from scratch with sugar and fresh cranberries if you want to save even more.
