Retro French Chicken

Ingredients:
- 4 boneless chicken breasts
- 1/3 cup flour
- 2 tsp. salt
- 1 ½ tsp. paprika
- 1 ½ tsp. ground black pepper, divided
- 4 Tbsp. olive oil
- 4 Tbsp. fresh lemon juice
- 2 Tbsp. water
- 2 Tbsp. chopped scallion
- 1 Tbsp. fresh thyme leaves, or 1 tsp. dried thyme
- 2 cloves garlic minced
- 2 Tbsp. melted butter
Instructions:
- Preheat the oven to 400 degrees Fahrenheit.
- Prepare a large 12-14 inch cast iron skillet or a 9X13-inch baking dish. Pour the melted butter in the pan and spread to coat.
- In a large zip bag, combine flour, salt, paprika and ½ teaspoon pepper. Mix well. Add chicken breasts and toss to coat.
- Place coated chicken in the buttered dish, top side down, and place in the oven for 15 minutes.
- Meanwhile, in a small bowl, mix the olive oil, lemon juice, water, scallions, thyme, garlic and 1 teaspoon pepper. Stir well.
- After the chicken has cooked for 15 minutes, flip it and pour the lemon garlic sauce over the top. Place back into oven for 10 minutes.
- Once the chicken has cooked through, remove from the oven and serve warm with extra pan sauce.
