Retro French Chicken

Yield: 4 servings

Ingredients:

  • 4 boneless chicken breasts
  • 1/3 cup flour
  • 2 tsp. salt
  • 1 ½ tsp. paprika
  • 1 ½ tsp. ground black pepper, divided
  • 4 Tbsp. olive oil
  • 4 Tbsp. fresh lemon juice
  • 2 Tbsp. water
  • 2 Tbsp. chopped scallion
  • 1 Tbsp. fresh thyme leaves, or 1 tsp. dried thyme
  • 2 cloves garlic minced
  • 2 Tbsp. melted butter

Instructions:

  • Preheat the oven to 400 degrees Fahrenheit.
  • Prepare a large 12-14 inch cast iron skillet or a 9X13-inch baking dish. Pour the melted butter in the pan and spread to coat.
  • In a large zip bag, combine flour, salt, paprika and ½ teaspoon pepper. Mix well. Add chicken breasts and toss to coat.
  • Place coated chicken in the buttered dish, top side down, and place in the oven for 15 minutes.
  • Meanwhile, in a small bowl, mix the olive oil, lemon juice, water, scallions, thyme, garlic and 1 teaspoon pepper. Stir well.
  • After the chicken has cooked for 15 minutes, flip it and pour the lemon garlic sauce over the top. Place back into oven for 10 minutes.
  • Once the chicken has cooked through, remove from the oven and serve warm with extra pan sauce.
