Dine on a Dime: Green Chile Chicken & Rice Skillet
September is the perfect time to bring a little cozy comfort to the dinner table—without bringing a big bill to the grocery store! As green chile season heats up and fall flavors start making their way into our kitchens, we’re serving up a budget-friendly meal that proves delicious doesn’t have to mean expensive.
Cozy comfort food without the big grocery bill!
Serves: 4–6
- Prep time: 10 minutes
- Cook time: 30 minutes
- Total: About 40 minutes
Ingredients:
- 1 lb. boneless, skinless chicken thighs or chicken breasts, cut into bite-size pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 1 can (4 oz.) diced green chile — mild or hot
- 2 cups low-sodium chicken broth
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup frozen corn
- ½ cup shredded cheddar or Mexican-blend cheese
Optional: chopped green onions or cilantro for topping
Optional: lime wedges for serving
Directions:
- Brown the chicken. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook for about 4–5 minutes, stirring occasionally, until lightly browned. Remove chicken and set aside.
- Build the flavor. Using the same skillet, add the onion and cook for about 3 minutes. Add garlic and cook for another minute.
- Add the rice. Stir in the uncooked rice and cook for about 1–2 minutes, allowing it to lightly toast.
- Bring on the green chile! Add the green chile, chicken broth, cumin and oregano. Stir everything together.
- Add the chicken and corn. Return the chicken to the skillet and stir in the corn. Bring the mixture to a gentle boil.
- Cover & simmer. Reduce the heat to low, cover and simmer for approximately 15–18 minutes, or until the rice is tender and the chicken reaches 165°F.
- Make it cheesy. Sprinkle cheese over the top. Cover for another 1–2 minutes, until the cheese melts.
- Serve & enjoy! Top with green onions or cilantro and a squeeze of lime if desired.
