Dine on a Dime: New Year’s Veggie Stir-Fry Noodles
This one is perfect when you’re tired of heavy holiday food but still want something flavorful and filling.
Ingredients (makes 3–4 servings):
- 1 pack ramen noodles or spaghetti
- 1 tbsp oil
- 1 cup cabbage (or a handful of coleslaw mix)
- 1 carrot, shredded or thinly sliced
- ½ onion, sliced
- 1 bell pepper (optional)
- 2 garlic cloves, minced (or ½ tsp garlic powder)
- 2 tbsp soy sauce
- 1 tbsp brown sugar or a pinch of sugar
- ½ tsp black pepper
- 1 egg (optional)
- Squeeze of lime (optional but delicious)
Add-ins if you have them: leftover chicken, a handful of frozen veggies, or canned mushrooms.
Directions:
1-Cook noodles:
Boil ramen/spaghetti until just done. Drain and set aside.
2-Stir-fry veggies:
Heat oil in a pan. Add onion, carrots, cabbage, bell pepper. Cook 5–6 minutes until soft.
3-Add garlic + seasoning:
Add garlic, soy sauce, sugar, and black pepper.
4-Add noodles:
Toss noodles into the pan and mix well so everything is coated.
5-Optional egg:
Push veggies to one side of the pan, scramble an egg on the empty side, then mix it all together.
6-Finish:
Add a squeeze of lime or lemon for brightness.
