Dine on a Dime: Street Corn Chicken Tacos

Ingredients (serves 4–6)
- 2 cups cooked shredded chicken (rotisserie = time saver ????)
- 1 can corn (or 2 cups frozen, thawed)
- 1/4 cup mayo
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese (or queso fresco)
- 1 lime (juiced)
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt & pepper to taste
- Small tortillas (corn or flour)
- Optional toppings: cilantro, hot sauce, diced onion
Instructions
- Make the street corn mix:
- In a bowl, combine corn, mayo, sour cream, lime juice, chili powder, garlic powder, and a pinch of salt & pepper.
- Add chicken:
- Stir in your shredded chicken until everything is coated and creamy.
- Warm tortillas:
- Heat on a skillet or microwave wrapped in a damp paper towel.
- Assemble tacos:
- Scoop the mixture into tortillas and top with cotija cheese, cilantro, and any extras you like.
- Serve & enjoy:
- Squeeze extra lime on top for that fresh, zesty kick
