Dine on a Dime: Irish-Style Sausage & Cabbage Skillet
Hearty, cozy, and perfect for March—this dish brings St. Patrick’s Day vibes without the extra cost.
Ingredients (Serves 4 | Budget-friendly)
- 1 lb smoked sausage or kielbasa, sliced
- 1 small head green cabbage, chopped
- 3–4 medium potatoes, diced
- 1 small onion, sliced
- 2 cloves garlic, minced (optional)
- 1 tbsp oil or butter
- 1 cup water or broth
- Salt & pepper to taste
Optional: pinch of paprika or garlic powder
Instructions
- Heat oil or butter in a large skillet or pot over medium heat.
- Add sausage and cook until lightly browned. Remove and set aside.
- In the same pan, sauté onion (and garlic if using) until softened.
- Add potatoes, cabbage, water/broth, salt, and pepper. Cover and cook 12–15 minutes, stirring occasionally, until potatoes are tender.
- Stir sausage back in and cook uncovered for 3–5 more minutes.
Taste, season as needed, and serve hot!

Serve with a slice of bread or cornbread and finish with a sprinkle of parsley for a little “luck of the Irish” feel.
