Budget-Friendly Carnitas Recipe

Serves: 6-8

Ingredients:

  • 3 lbs. pork shoulder (often one of the cheapest cuts)
  • 1 tbsp salt – pantry item
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 cup orange juice (or 2 oranges, juiced
  • 1 cup of water
  • 1 cup of lard
  • ¼ of dark soda
  • 1 lime in halves

Instructions:

  • Prepare the Meat: Cut the pork shoulder into large chunks and season with salt.
  • Slow Cook: Place lard. pork, onion, garlic, orange juice, lime, and water in a slow cooker or large pot. Cook on low for 6-8 hours or high for 4-5 hours until fork tender.
  • Add dark soda and let it cook for an additional 30 minutes.
  • Shred & Crisp: Remove pork, shred with forks, and place on a dish.

  • Buy in Bulk – Pork shoulder is cheaper per pound in larger cuts.
  • Stretch It – Use leftovers for tacos, burritos, or nachos throughout the week.
